THE MAISON

A short list, built one cellar at a time.

We are looking for one thing: a wine you recognise at the first sip. A village, a parcel, a signature.

The list will stay short. We would rather know a few growers well than carry many.

THE SELECTION

Three bottles on the list.

Champagne in its most honest form. Coteaux Champenois, the still face of the region. Ratafia, the aperitif of the houses. The growers we are choosing all farm their own vines and bottle under their own name.

WHAT WE STAND FOR

What we are looking for.

Four short criteria. We wrote them down so we can be held to them.

Terroir

The wine has to speak of a place. A village, a parcel, a recognisable terroir. That is the first thing we listen for.

Scale

Small growers, small plots, small bottlings. We are after growers who farm what they know.

Craft

The grower is responsible end to end. From the vines to the bottle, the decisions and the gestures are theirs. So is the name.

Provenance

Every bottle is traceable to a parcel, a hand, a year. Nothing arrives in Hong Kong without a clear line behind it.

We are putting together a short list of partners in Hong Kong for when the import lands. Allocations will be small, conversations direct. If you run a list and want to know what we are bringing, write early.
